Pudding Spanish Cream

 
 

 

 
Just in case Aunt Pit didn't include the details of using powdered gelatin, here they are:
Sprinkle gelatin on cold liquid.
Let stand for 5 to 10 minutes.
Add warm liquid or heat gently.
Stir until dissolved.

1 envelope Knox gel.
3 eggs
1 tablespoon vanilla
1 q milk
8 tablespoons sugar

soak gel in milk

put on fire and stir till dissolved

add egg yolks and 4 tablespoons sugar

stir till it comes to boiling point but don't let it boil

remove from fire

have egg whites beat stiffly with 4 tablespoons sugar

add whites stiring briskly till mixed flavor

set to cool in ice box.

 

 

Aunt Pit wasn't afraid to use raw eggs. If you are worried about salmonella, substitute pasteurized or powdered eggs.
